Christoforou has been the defining Cypriot rider of her generation, with a long record of national titles and international representation. She has repeatedly won both the Cypriot road race and national time-trial championships, while also becoming the first Cypriot woman to race the Tour de France Femmes. Her international results include victory at La Classique Morbihan in 2021, 2nd at the Mediterranean Games road race in 2022 and 3rd at the Grand Prix du Morbihan Féminin.
